It was already on the list. It’s owned by Eytan Sugarman and Will Makris, after all — two legends in the hospitality industry. The West Village has a way of making every plan feel like a happy accident anyway — and Dandelion, it turns out, was the kind of gamble that pays off before you’ve even ordered your first drink.

I closed the place down.

I regret nothing.

Nobody warned me about the candle wax.

Dandelion is gothic in the best possible way — dark, sexy, and dripping with the kind of atmosphere that makes you feel like you’ve wandered somewhere slightly secret. Low lighting that actually earns the word low, wax pooling everywhere like the room has been running since the 1800s and simply never stopped.

It’s dramatic without being theatrical.
Moody without trying to be.

The bar anchors the room exactly as it should — no chaos, no music you have to shout over, no frantic energy looking for somewhere to land. Just a steady, quietly magnetic hum and the creeping realization that you are absolutely not leaving anytime soon.


THE ODDS

What makes Dandelion worth the spin is that it understands something most bars get wrong: atmosphere and substance are not a trade-off.

This is a room that looks like a gothic fever dream and then hands you a martini that completely resets your expectations. Ice-cold, precise, no unnecessary theatrics — the kind of drink that reminds you that simple, done properly, is anything but. Especially when it’s executed so perfectly by the bar team (namely, one Nikola Stankovic).

The menu moves between classic and contemporary without once feeling like it’s reinventing things for the sake of it. There’s restraint here — which, given the decor, is almost funny — and that restraint is exactly what makes it work.

The West Village doesn’t need another cocktail bar.

Dandelion isn’t another cocktail bar.

It’s a place that gets the feeling right — which is the only thing that actually keeps people coming back.

Start with the martini. Obviously, irrefutably, start with the martini.

From there, let the menu take you somewhere. Nothing here is trying to be clever at the expense of being good — which in New York, in 2025, is rarer than it should be.
